STRAWBERRY PIE 
9 inch baked pastry shell
1 1/2 qts. fresh strawberries
3 tbsp. cornstarch
3/4 to 1 c. sugar
1 c. water
1 tsp. butter

Clean and hull berries. Measure 2/3 cup of berries and mash in 1 quart measure. Add water and 3/4 to 1 cup sugar, depending on sweetness of berries. Microwave 5 to 6 minutes on High, or until mixture is boiling.

Soften cornstarch in small amount of water and add to mixture. Microwave 2 to 3 minutes on High, or until mixture thickens, stirring once. Stir in butter. Cool. Fill baked pie shell with remaining strawberries. Pour cooled glaze over top. Garnish with whipped cream.

Variation: Soften 1 package (8 ounces) cream cheese. Spread evenly in bottom of pie shell before adding strawberries.

Since microwave ovens vary in power, you may need to adjust your cooking time.
