LO - CAL STUFFED POTATOES 
2 lg. baking potatoes
Vegetable cooking spray
1/2 c. plain non-fat yogurt
1 tbsp. skim milk
2 tbsp. grated Parmesan cheese
2 tbsp. chopped chives
1/2 tsp. salt
1/8 tsp. garlic powder
Dash of pepper
1/4 tsp. paprika

Wash potatoes and spray with cooking spray. Bake at 375 degrees for 1 hour or until done. Let cool to touch. Cut potatoes in half lengthwise. Scoop out pulp, leaving a 1/4 inch shell. Set aside. Combine potato, yogurt, and next six ingredients in bowl; mash until light and fluffy. Spoon mixture into shells. Place potatoes on an ungreased baking sheet. Sprinkle with paprika and bake, uncovered, 10 minutes or until thoroughly heated. 4 servings (115 calories each).
