LO-CAL CHINESE CHICKEN 
2 to 3 boned chicken breasts, bite size pieces
Assorted vegetables from salad bar, (cauliflower, broccoli, celery, onion, green pepper, mushrooms, a few sesame seeds
Other optional add-ins (sliced water chestnuts, bamboo shoots, Chinese vegetables, Chinese noodles

Spray skillet with Pam and turn on medium-high heat. Cook chicken, stirring constantly, until white (about 5 minutes). Take chicken out. Put in about a quarter cup of water and all the vegetables. Cook about 2 minutes, stirring constantly. Put chicken back in. Put in about 1 tablespoon soy sauce (and another tablespoon of water if it's sticking to the pan). Cook and stir another two minutes.

Serve over rice or Chinese noodles.
