MERINGUE MINT COOKIES 
2 egg whites (beaten with a pinch of cream of tartar)
2/3 c. sugar
Green food color
1 (6 oz.) pkg. mint chocolate chips
2-3 drops mint flavoring

Preheat oven to 350 degrees. Beat egg whites until very stiff - slowly add sugar - add green food coloring to desired color; fold in mint chocolate chips and add mint flavoring. Drop by spoonfuls on greased cookie sheet. Turn preheated oven off. Put cookies in oven and leave there for 6 hours or overnight. Makes 30 cookies.
