MOM'S CHICKEN CASSEROLE 
2 breasts of chicken
3/4 c. mayonnaise
A little chicken broth
1 can cream of chicken soup
1 c. diced celery
1/2 c. cashew nuts
1 can water chestnuts
1 tbsp. minced onion
1 tbsp. lemon juice
1/4 tsp. pepper
3 hard boiled eggs, coarsely chopped
Potato chips

Cook chicken, bone, cut into bite-size pieces. Mix mayonnaise and a little broth to thin. Add undiluted soup, celery, nuts, lemon juice, onion, pepper, and eggs. Mix and pour into a buttered casserole. Cover with crushed potato chips. Bake at 350 degrees for 20-30 minutes.
