MARYLAND CRAB CAKES 
1 lb. can crab meat
2 eggs
2 tbsp. horseradish mustard
1/4 tsp. salt
1/8 tsp. pepper
5 drops Tabasco
1 onion, minced
1 tbsp. chopped parsley
Cracker crumbs
Fat for frying

Combine all ingredients except crumbs and fat. Mix together lightly; form into desired size cakes. Do not pack firmly. Pat cakes into crumbs. In heavy skillet, heat 1 1/2 inches fat. Brown cakes on both sides until golden. Serve immediately.
