CHINESE CHICKEN 
1 whole chicken
2 tsp. salt
2 tbsp. soy sauce
1/2 tsp. sesame oil
2 bunches green onions, split lengthwise & cut crosswise into 1/2 inch pieces
1/2 c. peanut oil

Fill large kettle with water, bring to a boil. When it comes to a boil, place chicken in pot. When water stops boiling, remove chicken. Cover pot and bring water to boil again. When it comes to a boil, add chicken, cover, turn off heat, but leave pot on burner. Leave chicken in pot for 1 hour. (It really does cook.) Remove from pot and cool. When cool, pull meat from bones and shred. Place meat on platter. Sprinkle soy sauce, sesame oil, onions and salt over top. Heat peanut oil until smoking. Pour over top of chicken mixture. Toss like a salad. Serve with steamed rice and stir-fry vegetables. Serves 4.
