FRAN'S RELISH 
1 qt. ground green tomatoes
1 qt. ground onions
1 dozen green peppers, ground
1/2 dozen red peppers, ground
6 lg. cucumbers, ground
1/3 c. salt

Mix ground vegetables with salt, let stand overnight. Drain and cover with cold water. Allow to stand 2 hours. Drain, then add:

6 c. sugar
1 qt. vinegar
2 tbsp. celery seed
1 tsp. turmeric
2 tbsp. mustard seed

Cook all ingredients together for 20 minutes. Add green food coloring. Process according to directions for relish.

Makes 8 quarts.
