ORANGE CASHEW CHICKEN | |
1 can mandarin oranges 1/4 c. prepared stir fry sauce 3 tbsp. vegetable oil, divided 3 whole, boneless chicken breasts, cut into strips 1/2 c. cashews 1 clove garlic, minced 1 med. onion, sliced 1/2 lb. fresh snow peas Reserving 2 tablespoons syrup, drain oranges. Blend syrup with stir fry sauce. Heat 2 tablespoons oil in skillet or wok over high heat. Add chicken, cashews and garlic; stir fry 3 minutes, remove, heat 1 tablespoon oil in same pan. Add onions and snow peas, stir fry 3 minutes. Add chicken mixture and sauce, stir to coat. Remove from heat, add oranges. Serve over rice. |
