PEPPER STEAK 
1 1/2 lb. sirloin steak, tenderized
1/4 c. salad oil
2 c. water
1 med. onion, sliced
1 tsp. garlic salt, or fresh clove
1/2 tsp. ginger, or fresh
2 med. bell peppers, cut in cubes
2 tbsp. cornstarch
2 tsp. sugar
4 tbsp. soy sauce
2 med. tomatoes, cut into eights

Before cooking in small bowl, mix together; water, onion, garlic salt, and ginger. In another bowl mix cornstarch, soy sauce and sugar. Set aside.

At same time as cooking meat, in another skillet stir in the prepared water mixture. Heat to boiling, reduce heat, cover and simmer 8 to 10 minutes. Cook meat in salad oil in large skillet until brown, stirring frequently (about 5 minutes.)

Add bell pepper during last 5 minutes. Add cornstarch mixture. Cook stirring constantly until thickens and boils. Boil and stir 1 minute. Add meat later (meat more tender the less time it was cooked. Can even pour mixture over meat.)

Add tomatoes, cover and simmer until tomatoes are heated, about 3 minutes. Serve over cooked rice.
