BACON ALMOND POTATO BALLS 
2 lg. potatoes, peeled, cooked & mashed
5 slices bacon, fried crisp, drained & crumbled
4 tbsp. butter, melted
1 lg. green onion, finely chopped
1/2 tsp. salt
All-purpose flour
1 egg, beaten
Sliced almonds
Vegetable oil for frying

Combine mashed potatoes, bacon, butter, green onion and salt. Chill in refrigerator at least 2 hours. Shape potato mixture into 1" balls. Toss the balls in flour, dip in beaten egg and then roll in almonds. Deep fry in oil heated to 375 degrees until golden brown. Drain well and serve. Serves 4 persons.
