MY MOTHER'S FRENCH DRESSING FOR
SALAD
 
Olive oil, the best you can get
Vinegar, red wine, herbed, champagne, take your choice
Garlic, 1 clove or dry powder
Dry mustard
Fresh ground pepper
Herbs, sage, thyme, marjoram, not more than two
Salt, not necessary & also bad for you
Celery, radishes, olives, mushrooms, tomatoes (whatever you like, but not too much)

In this recipe, everything is approximately, based on your own judgment and the number to be served, whatever is available and your own taste. In a wooden bowl, put a pinch of garlic powder or rub with a split cloves. Add a dash of dry mustard, fresh ground pepper, salt if desired. Then add 1 part of vinegar and 4 parts of olive oil, the best you can get. Be generous in your oil, it's the heart of the dressing. Then add the herbs you want and the vegetables. Mix all together thoroughly and add your lettuce at the end. Toss the dressing over the lettuce, do not pour it on, it should come up from under!
