CHICKEN FRIED ROUND STEAK 
1 1/2 to 2 lbs. round steak, 1/2 inch thick
2 beaten eggs
2 tbsp. milk
1 c. fine bread or cracker crumbs
1/4 c. fat
Salt and pepper

Pound steak thoroughly with sharp edged meat pounder. Dip into egg mixed with milk, then into crumbs. Brown in hot fat on both sides. Season. Cover and cook over very low heat 45 to 60 minutes. Serves 6.

(I put the meat and scrapings from the frying pan in a casserole, rinse frying pan with 1/4 cup milk and pour over meat. Cover and bake at 300 degrees for about 2 hours.)
