HUEVOS BOGOTANO | |
1 dozen eggs 1/2 lb. pork sausage (Jimmy Dean or Owens') 1/2 lb. fresh or frozen corn 1/4 tsp. onion powder Salt and pepper to taste Crumble sausage and saute over medium heat in a frying pan until cooked through but not browned, stirring frequently. Remove sausage from pan to paper towel to absorb excess fat. Drain fat from pan and reduce heat to low. While sausage is cooking, heat corn in microwave or saucepan, about 3 minutes in a 700 watt microwave. Crack eggs into bowl, add onion powder, salt and pepper, and beat until light and fluffy. Pour eggs into frying pan and stir in sausage and corn. Cook over low heat, stirring frequently, until eggs are done (generally best if eggs are slightly runny). Serve with sausage patties and biscuits. |
