SAVORY SAUSAGES AND PEPPERS 
1 lb. ground turkey
1 slice bread, torn into crumbs
2 tsp. dried Italian herb seasoning or 1/2 tsp. oregano, basil, 1 tsp. thyme
2-3 cloves garlic, chopped fine
1/2 tsp. salt (optional)
Pepper to taste
1 green and 1 red pepper, seeded and cut into strips
2 tbsp. water or dry cooking wine

Mix turkey, bread crumbs, herbs, garlic, salt, and pepper thoroughly. Divide evenly into 8 portions and shape into sausage link. In large saute pan, sprayed with no stick vegetable oil, cook sausage 5 minutes or until brown, turn and cook other side 6-8 minutes, just until firm. Remove. Drain pan. Add pepper wedges, cook briefly over medium high heat. Add water or wine, stir scrapping cooking bits from pan. Cover and steam until peppers are tender crisp. Add sausages.
