POINSETTIA COOKIES 
2 c. confectioners' sugar
1 c. butter
2 eggs
1 tsp. salt
3 c. flour
1 tsp. vanilla
1/2 tsp. rum extract
1 c. shredded coconut
1 c. butterscotch chips
1/2 c. maraschino cherries, cut in wedges
Granulated sugar

Beat together confectioners' sugar and butter, add eggs and vanilla and rum flavoring. Sift together flour and salt. Stir into butter mixture. Add coconut and 3/4 cup butterscotch chips. Chill dough until firm. Roll into 1" balls. Place on ungreased cookie sheet, flatten with bottom of glass dipped into granulated sugar. Place a butterscotch chip in center of each, place cherry wedges in circle to resemble poinsettia. Bake at 375 degrees for 12 minutes.
