"BEN'S" ZUCCHINI CASSEROLE | |
3 med. or 5-6 sm. zucchini 2 cloves garlic, chopped 1 med. onion, chopped 1 green pepper, chopped 2 tbsp. butter, divided 1/2 c. water 1 (16 oz.) can stewed tomatoes 1 (16 oz.) can tomato sauce 1 (6 oz.) box croutons (any flavor) 12 oz. shredded Mozzarella cheese Cut ends of zucchini and slice 1/4 inch thick. In large saucepot, melt 1 1/2 tablespoons butter. Add zucchini, garlic, onion, green pepper and water. Cook until water is gone and vegetables are tender. Add undrained tomatoes. (Break tomatoes up with fork or knife.) Add tomato sauce, mix well. Cook, stirring occasionally 15-20 minutes. |
