CHINESE FRIED RICE 
2 c. raw rice cooked according to pkg. directions
3/4 lb. bacon cooked and crumbled (reserve bacon grease)
1 lg. bunch green onions, sliced (separate tops from bulb)
1 1/2 c. fresh mushrooms, sliced
3 eggs, fried over-hard, cut into noodle like strips
Soy sauce

Cook rice and cool completely. Saute bulb part of onion in reserved bacon grease for a few seconds, drain and set aside.

Saute mushrooms in the same manner. Set aside.

Saute rice in bacon grease until warmed through. Add soy sauce to taste. Stir into rice in the following order the mushrooms, sauteed onion, cooked bacon, onion tops and the cooked egg. Stir gently after each addition. Serve immediately. Serves 8.
