CRABMEAT DRESSING 
2 med. onions
2 shallots
5 toes garlic
3 ribs celery
1/2 stick butter
1 tbsp. olive oil
10 slices bread, soaked, drained, chopped
Thyme to taste
Cayenne pepper to taste
3 dashes Lea & Perrin
2 lb. crabmeat
2 eggs

Chop first 4 ingredients and saute in butter and oil. Remove from heat. Add to bread. Add thyme, cayenne pepper, Lea & Perrin and crabmeat (fold in crabmeat; do not mix thoroughly). Beat 2 eggs, add to mixture. Place in casserole. Bake at 350 degrees for 1 hour.
