COD FISH CAKES | |
1 lb. boneless cod fish 1 bunch scallions chopped 1/2 sm. green pepper chopped 1/8 tsp. garlic powder 1 egg 3/4 c, flour 1/2 c. water 1 c. corn oil Soak cod fish overnight. Rinse in cold water. Put fish in sauce pan cover with water cook over medium heat until you can flake fish with a fork. Remove fish from pan place in medium mixing bowl. Flake fish with fork. Add chopped scallions, hot green pepper, 1/8 tsp. garlic powder, egg, flour 3/4 cup water mix together. Note: If mix to thick add 1/4 cup water if to thin add 1/4 cup flour that cup corn oil or oil of your choice in frying pan at 375 degrees. Add fish mixture to tablespoons one at a time to oil brown on both sides. Remove on paper towels may be eaten warm or cold. |
