COD FISH CAKES 
1 lb. dry cod fish
8 med. white potatoes, peeled
1 onion, chopped
1 tsp. baking powder
1 egg
Salt to taste
Black pepper to taste
1 c. cooking oil

Soak fish overnight, changing water several times (2). Boil fish and potatoes together until potatoes are soft. Drain and let cool 15 minutes. Mash fish and potatoes together (removing large bones). Add onions, baking powder, egg and seasonings. Form mixture into medium size patties.

Pour cooking oil into skillet, preheat skillet. Place patties in cooking oil, brown patties on both sides. Remove from skillet.
