CHICKEN CACCIATORE 
3 to 4 whole chicken breasts, split & deboned
1/4 c. shortening
1/2 c. flour
3 c. thinly sliced onion
1 c. chopped green pepper
2 cloves garlic, crushed
1 (16 oz.) can stewed tomatoes, drained
1 (16 oz.) can tomato sauce
3 c. sliced mushrooms
1 tsp. salt
1/4 tsp. oregano

Wash and dry chicken. In large skillet, melt shortening over medium heat. Coat chicken with flour. Cook in shortening until brown. Set aside. Add onion, green pepper and garlic to skillet, cook until tender. Stir in remaining ingredients. Add chicken and simmer 30 to 40 minutes.
