TURKEY QUICHE 
2 1/2 to 3 c. leftover stuffing or 1 (6 oz.) pkg. stuffing mix
1 c. chopped turkey
1 c. shredded Swiss cheese
4 beaten eggs
1 (5 1/2 oz.) can evaporated milk

If using stuffing mix prepare according to package directions. Press stuffing into 9 inch pie plate or quiche dish, forming crust.

Bake at 400 degrees for 10 minutes. Combine meat and cheese. In separate bowl beat eggs, milk, 1/8 teaspoon pepper. Sprinkle meat and cheese mixture into hot crust. Pour egg and milk mixture on top. Lower temperature to 350 degrees. Bake quiche 30 to 35 minutes or until center is set. Let stand 10 minutes before serving. Garnish with tomato wedges if desired. Serves 6
