ENCHILADAS 
12 flour tortillas
1 c. chopped onion
1 (16 oz.) can Old El Paso refried beans with green chilies, onion and garlic
1 (10 oz.) can Old El Paso enchilada sauce (mild or hot)
1 (.50 to.75 oz.) block of med. to sharp Cheddar cheese, 24 slices

Spread about 1 tablespoon of refried beans on each tortilla. Sprinkle chopped onion on and add 2 slices of cheese to each tortilla. Roll tortilla around filling. Arrange in a grease 9x13 inch pan. Pour enchilada sauce over enchiladas. Grate the remaining cheese coarsely and sprinkle over top of sauce. Bake at 400 degrees for 20-30 minutes, until cheese is bubbly.
