SPLIT PEA SOUP 
2 1/4 c. dried green split peas
1 1/2 c. celery, chopped
1 c. onions, chopped
9 c. water
1 to 1 1/2 lb. ham
Fresh parsley
Salt and pepper to taste
Dash liquid smoke (optional)

In large pot, combine all ingredients. Cook over medium heat until mixture comes to a boil. Cover; reduce to low heat. Continue cooking, stirring occasionally for 2 to 2 1/2 hours or until soup is thick. If ham is on bone, remove from soup and carve meat off, and return meat to soup. Season to taste.
