MUSHROOM TOPPED BEEF PATTIES 
1 egg, beaten
2 tbsp. milk
1/2 c. fine dry bread crumbs
1/4 tsp. salt
1/8 tsp. pepper
1 lb. ground beef
1/4 of 8 oz. pkg. soft style cream cheese (2 oz.)
2 tbsp. crumbled blue cheese
1 (2 1/2 oz.) jar sliced mushrooms, drained
1 tbsp. snipped chives (may omit chives and use cream cheese with chives and onion)

In medium mixing bowl, combine egg and milk. Stir in bread crumbs, salt and pepper. Add ground beef and mix well. Shape meat mixture into four 3/4 inch thick patties. Place patties on the unheated rack of a broiler pan. Broil 3 to 4 inches from the heat for 6 minutes. Turn and broil 6 to 8 minutes more or until meat is no longer pink. Meanwhile, in a small bowl, combine cream cheese and blue cheese. Stir in mushroom mixture; pour over patties. Broil 2 to 3 minutes more or until topping is hot. Sprinkle with chives or substitute cream cheese with chives in place of plain cream cheese.
