CHICKEN AND DUMPLINGS 
1 hen or lg. fryer
2 c. self-rising flour
1 c. water for dumplings

Boil chicken until tender. Add salt and pepper to taste. Take all bones from chicken. Leave in large pieces. While chicken is boiling, make dumplings. Mix water and flour into stiff dough. Roll very thin on heavy floured board. Let stand 15 to 20 minutes to dry. Then cut into 1/2 inch strips, then 1 inch pieces. Drop dumplings into simmering chicken broth a few at a time. Do not stir, only push down into broth with spoon. Simmer only while cooking dumplings. Add chicken to mixture a little at a time while dropping dumplings in broth. Cook 5 minutes after all dumplings and chicken have been added. Let dumplings be juicy.
