ZUCCHINI PIE 
3 c. diced, unpeeled zucchini (about 3 sm.)
1 lg. onion, chopped
1/2 c. grated Parmesan cheese
1/2 c. cheddar cheese
1/2 c. salad oil
1 c. Bisquick mix
4 beaten eggs
3 - 4 tsp. minced parsley (optional)
1 tsp. salt
1/2 tsp. pepper

Grease a 9 inch pie plate or baking dish. Combine all ingredients mixing until zucchini are just covered with batter. Bake in preheated 350 degree oven for 35 to 40 minutes or until lightly browned. Serve hot or cold. Serves 4 to 8.
