MIKE'S POTATOES 
3 tbsp. butter
3 med. potatoes
1 1/4 c. grated Monterey Jack cheese
1 1/4 c. grated Cheddar cheese
2/3 c. diced tomato
2 tbsp. minced onion
2 tbsp. chopped green onion
1/2 c. diced avocado
1/2 c. sour cream

Boil unpeeled potatoes. Dice into skillet with melted butter. Brown, stirring frequently. Add cheeses, tomatoes, onion, and cook until cheeses melt. Add avocado and stir gently. Top with sour cream.

NOTE: Salsa may be substituted for tomatoes and onion.
