MINCE MEAT CAKE 
2 c. sugar
1/2 c. cooking oil
4 c. flour
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. ground cloves
2 tsp. baking soda
1 tsp. salt
2 c. buttermilk
1 pt jar (2 c.) mince meat
1 c. chopped nuts

Combine sugar and cooking oil; mix well. Sift together the flour, soda, salt, and spices. Add buttermilk to sugar mixture. Add dry ingredients alternately. Beat well. Stir in the mince meat and finally the nuts. Turn batter into a greased 8 inch floured tube pan. Bake at 325 degrees for 1 hour or longer if necessary. Test with toothpick for doneness.

Note: 1/4 cup bourbon may be substituted for 1/4 cup of buttermilk, if desired.

CARAMEL ICING:

1 tsp. vanilla
2 c. brown sugar
1 pinch of salt
1 stick butter
5 tbsp. milk or cream
1/4 tsp. baking powder

Bring to boil in saucepan. Let boil a few minutes. Beat in baking powder with spoon; add vanilla. Let cool slightly. Beat until it gets thick. Add powdered sugar until you can spread on cake.
