POOR MAN'S RICE PUDDING 
3 c. milk
1/2 can evaporated milk
1 1/4 c. water
1/2 c. rice
2 eggs or 3 egg yolks
1/2 c. sugar
1 tsp. vanilla
1/4 tsp. nutmeg

Boil milk, water, evaporated milk, and rice. Stir until rice is done and the mixture is thickened. Remove from heat and cool for 5 minutes.

In a separate bowl, combine the beaten eggs, sugar, vanilla, and nutmeg. Fold into the rice mixture and simmer. covered, over very low heat for 5 minutes.

May be served warm or cold.

Note: You may use pasteurized eggs and eliminate the final (5 minute) cooking step, if desired.
