PERFECT APPLE PIE 
5-7 tart apples
1 c. sugar
2 tbsp. flour
1/8 tsp. salt
1 tsp. cinnamon
1/4 tsp. nutmeg
2 tbsp. butter

PASTRY:

1 1/2 c. flour
1/2 tsp. salt
1/2 c. shortening
4-5 tbsp. water

Prepare pastry and bake at 450 degrees for 10 minutes (maybe a little more - watch it).

Pare apples and slice. Mix sugar, flour, salt and spices. Sprinkle 1/2 over pie shell. Heap apples into pastry shell, sprinkle with remaining sugar mix. Dot with butter. Adjust top crust, brush with milk, sprinkle with sugar. Bake at 350 degrees for 40 minutes.
