MARIE'S SALSA PIZZAIOLA 
3 tbsp. olive oil
1 c. onion, finely chopped
1 tbsp. garlic, finely chopped
4 c. Roma (Italian) tomatoes, coarsely chopped
1 (6 oz.) can tomato paste
1 tbsp. dried oregano
1 tsp. dried basil
1 bay leaf
4 tbsp. brown sugar
1 tbsp. salt
Ground pepper as desired

Mix together and boil one hour slowly or microwave in a covered casserole at high temperature until desired thickness. Remove bay leaf. Makes excellent pizza or pasta sauce and freezes well.

Since microwave ovens vary in power, you may need to adjust your cooking time.
