CORN FRITTERS 
16 oz. whole kernel corn, drained
1 c. flour
1 tsp. baking powder
3/4 tsp. salt
2 eggs
1/4 c. milk
Oil for frying, plus 1 tbsp.
Maple syrup or confectioners' sugar

Combine 1 tablespoon oil, corn, flour, baking powder, salt, eggs and milk. Drop by tablespoons into heated oil in skillet. Fry 3-5 minutes. Drain. Serve with maple syrup or sprinkle with confectioners' sugar.
