CORN FRITTERS 
2 c. flour
4 tbsp. sugar
2 tsp. baking powder
2 tsp. salt
4 eggs
1/2 c. milk
2 cans (16 oz. ea.) whole kernel corn
Oil for frying
Powdered sugar

Mix flour, sugar, baking powder and salt in bowl with wire whisk until light and thoroughly combined.

Beat eggs with milk and 4 teaspoons salad oil in another bowl, gradually beat in flour mixture, then corn.

Pour oil into deep sauce pan to 1 1/2-inches. Heat to 365 degrees. Drop batter by tablespoon into hot oil. Don't crowd! Fry 2 1/2 to 3 minutes turn once, remove when golden brown. Remove to wire rack. Cover with paper towels. Keep warm in 200 degree oven. Cover with powdered sugar.
