SPINACH CASSEROLE 
2 boxes frozen spinach, cooked and drained
6 oz. grated sharp cheese
1 can cream of mushroom soup
1 beaten egg
1 tbsp. grated onion
1 c. Pepperidge Farm stuffing mix
1/4 c. melted butter
1 c. sour cream

In a 1 quart casserole, mix all ingredients except 4 tablespoons cheese for topping. Bake at 350 degrees for 30 minutes. May be prepared 1 or 2 days ahead and baked when needed.
