ESCALLOPED POTATOES WITH CHEESE 
1 qt. cooked, sliced potatoes
3 tbsp. Crisco
3 tbsp. cornstarch
3/4 tsp. slat
1/4 tsp. paprika
2 1/2 c. milk
1 1/2 c. sharp cheese, put through food chopper

Make a sauce of Crisco, cornstarch, seasonings and milk. When boiling, add the cheese and stir until dissolved. Oil baking dish, put in the potatoes and cheese sauce mixed. Cover with bread crumbs, moistened with oil. Bake 35 to 40 minutes moderate oven.
