ITALIAN MEATBALLS 
1 lb. chopped meat (beef, pork & veal)
2 eggs
1/2 c. Italian bread crumbs
10 sprigs (or more) parsley, finely chopped
4 tbsp. grated Italian cheese
3 lg. buds garlic, finely chopped
Salt & pepper to taste

Mix ingredients well. Then roll into lemon-sized balls. Fry lightly (optional). Place gently into Italian sauce 1/2 hour before sauce is done.

Double portions for 2 pounds.
