CHINESE FRIED WALNUTS 
6 c. water
4 c. shelled walnuts
1/2 c. sugar
Oil for frying
Salt

Heat water to boiling, add nuts and boil for 1 minute. Stir nuts in sugar until the sugar has dissolved. Heat oil to 350 degrees and fry the nuts, half at a time, for about 5 minutes, until golden. Drain in sieve over bowl, cool on paper towels and salt to taste. Do not let them stick together.
