HEALTHY MUFFINS 
2 eggs
1 1/2 c. milk
3/4 c. oil
2 c. flour
2 c. uncooked oatmeal
1/2 c. sugar
1 tbsp. baking powder

Mix all ingredients in large bowl. Fill lined muffin cups 3/4 full with batter. Bake at 400 degrees for 20 minutes.

VARIATIONS:

Add 2 chopped apples (skin included) and 1 teaspoon cinnamon.

Add 1 cup fresh or frozen blueberries.

Decrease milk to 2/3 cup and add 2 cups mashed banana (4-5).

Add 1 cup pumpkin and 1 tablespoon pumpkin pie spice.

Add 1 cup raisins, 1 teaspoon nutmeg and 1 teaspoon cinnamon.

Make a double batch and freeze - defrost - heat in microwave. They keep well in freezer.

Since microwave ovens vary in power, you may need to adjust your cooking time.
