ZUCCHINI RELISH 
10 c. chopped zucchini
4 c. chopped onions
5 tbsp. kosher salt

Put all the above in a pan and let it stand overnight, rinse and drain.

2 1/4 c. white vinegar
4 1/2 c. sugar
1/2 tsp. pepper
1 tbsp. dry mustard
1/2 tsp. turmeric
1 tbsp. nutmeg
1 tbsp. cornstarch
2 tsp. celery seed
Add 1 green and 1 red pepper

Boil gently for 30 minutes, put in hot jars.
