WESTERN BEAN SKILLET | |
1/2 lb. dry lima beans 1 tsp. salt 1/2 lb. smoked Polish sausage, chopped 1 green pepper, chopped 1 can (1 lb.) tomatoes 3/4 c. water 1/4 c. firmly packed brown sugar 1 envelope chili mix 1 tsp. instant coffee mix Wash beans, cover with 4 cups water in saucepan and let stand overnight. Add salt, cover and simmer 1 1/2 to 2 hours, until tender. Drain. Cook sausage in large skillet until crisp. Add pepper, cook 5 minutes, stirring occasionally. Add tomatoes, water, sugar, contents of chili envelope, coffee powder, and drained beans. Simmer, uncovered, about 30 minutes, stirring occasionally. Serves 4. |
