1 1/2 c. Bisquick baking mix 1/4 c. butter, softened 2 tbsp. boiling water 6 slices bacon, crisply fried and crumbled 1/2 c. half & half 1 egg 2 tbsp. thinly sliced green onion 1/4 tsp. salt 1/4 tsp. cayenne pepper 1/2 c. shredded Swiss cheese May be substituted with spinach. Heat oven to 375 degrees. Generously grease 24 small muffin cups, 1 3/4 x 1 inch. Mix baking mix and butter. Add boiling water; stir vigorously until soft dough forms. Press rounded teaspoonful of dough on bottom and side of each muffin cup. Divide bacon evenly among muffin cups. Beat half & half and egg; stir in onion, salt and cayenne pepper. Spoon about 1 1/2 teaspoons into each muffin cup; sprinkle cheese over tops. Bake until edges are golden brown and centers are set, about 20 minutes. Refrigerate any remaining appetizers. Makes 24. |
