2 c. low fat cottage cheese 1 to 2 tbsp. low fat milk 1 tsp. salad mustard Dash of white pepper Dash of nutmeg 2 dashes cayenne pepper 2 tsp. dried minced onion 1 (8 oz.) carton of egg beaters 3/4 c. Swiss cheese 24 mini tart shells Combine low fat cottage cheese, low fat milk, salad mustard, pepper, nutmeg, cayenne pepper and minced onion in blender. Blend until smooth and add Egg Beaters and Swiss cheese. Blend until mixed. Pour into tart shells and bake at 375 degrees for 30 minutes, or bake in regular pie shell at 375 degrees for 45 minutes. Can be prepared early and frozen. |
