LEMONADE CAKE | |
1 pkg. lemon cake mix (can be pudding included) 1 pkg. (4 serving size) lemon flavor Jello instant pudding and pie filling 4 eggs 1 c. water 1/4 c. oil or 1/3 c. lemonade concentrate with 2/3 c. water LEMONY GLAZE: 1/2 c. Country Time lemonade 1/2 c. water 2 tbsp. melted butter 2 c. unsifted confectioners' sugar r 1 can (6 oz.) lemonade frozen drink concentrate, thawed, omit water and butter. Combine cake mix, pudding mix, eggs, water and oil in large mixing bowl. Blend well, beat at medium speed for four minutes. Pour into greased and floured 10 inch fluted tube pan. Bake at 350 degrees for 45 to 50 minutes or until cake tester comes out clean. Do not underbake. Cool in pan for about 5 minutes, then thoroughly prick warm cake with cake tester completely through to the bottom of cake. Gradually spoon Lemony Glaze (that has been blended well) over cake until completely absorbed. Cool 15 minutes, remove from pan. Sprinkle with confectioners' sugar. |
