OVEN CARAMEL CORN 
2 c. brown sugar, packed
2 sticks (1 c.) butter
1/2 c. white corn syrup
1 tsp. salt
1 tsp. baking soda
7 1/2 qts. popcorn (air popped popcorn is best)
1 c. (or more) peanuts (opt.)

Cook brown sugar, butter, syrup and salt. Bring to a boil and boil for 5 minutes on low. No need to stir while boiling. Remove from heat and add soda, stirring in carefully. Pour over popped corn, stirring well to coat evenly. Add peanuts if desired. Pour coated popcorn into large roasting pan or cookie sheet, spreading evenly. Bake at 200 degrees for 1 hour, stirring every 15 minutes. Store in covered bowl. Vanilla may be added along with soda to enhance flavor.
