OVEN FRIED POTATOES 
8 unpeeled lg. baking potatoes, each cut in 8 wedges (lengthwise)
1/2 c. oil
3 tbsp. Parmesan cheese
1/2 tsp. garlic powder
1/2 tsp. paprika
1/4 tsp. parsley
Salt and pepper to taste

Arrange potato wedges, skin side down, in shallow baking pan(s). In small bowl, mix remaining ingredients, and brush on potatoes. Coat well. Bake in preheated 375 degree oven for 45 minutes or until golden brown and tender. Brush occasionally with oil mixture.

Remove gently with spatula, carefully loosening the skin from the pan. Makes 8 generous servings.

For extra crispness, cut each potato into 10-12 wedges for thinner, crispier pieces.
