POACHED CHICKEN 
3 to 5 lbs. roast chicken
12 qt. kettle almost full of water

Bring water to a boil. Place chicken in boiling water. The water will stop boiling in just a moment or so. Remove the chicken from water; place on a tray. Cover the pot and bring back to a boil. Put the chicken back into the pot, cover, and turn off heat. Leave the bird in the pot and the pot on the burner. The water will be hot enough to cook the bird. After 1 hour, chicken is done. Great for chicken salad, casseroles, deep frying, or just about any dish you can think of. So tender and juicy its hard not to eat the chicken right off the bones.
