POACHED CHICKEN (Fish) 
1/4 c. chopped onion
1/4 c. celery and tops
2 c. water
1/2 c. dry white wine
1 bay leaf, broken into 2 pieces
1/2 tsp. salt
8 peppercorns
2-3 chicken breasts, split

Put all in large skillet over medium heat. Turn heat down to simmer, about 35-40 minutes. Let cool in liquid.

For fish, add a dash of dill, simmer for 15-20 minutes. (Salmon, halibut, etc. steaks)

Cover each serving with tomato sauce.

Place in blender/cuisinart and process:

1 can Bumblebee white solid pack tuna
1 sm. can anchovies (6)
1/4 tsp. garlic powder
1 tsp. lemon juice
1 1/2 c. Hellmann's mayonnaise
Dash celery salt and freshly cracked pepper

Sprinkle each serving with 1/4 cup capers, drained and paprika.
