BAKED TUNA CROQUETTES 
2 (6 1/2 or 7 oz.) cans tuna
1 c. fresh bread crumbs
Wheat germ
1/2 c. mayonnaise
1/4 c. evaporated milk
1/4 c. minced onion
2 tsp. lemon juice
1/2 tsp. salt
1/8 to 1/4 tsp. pepper

Grease a cookie sheet. Drain liquid from tuna into medium bowl; add crumbs and 1/2 cup wheat germ; blend well. Stir in mayonnaise, undiluted milk, onion, lemon juice, salt, pepper and tuna and mix well.

Preheat oven to 375. Sprinkle some wheat germ on waxed paper. With hands, shape mixture into 9 croquettes, roll lightly in wheat germ. Place on cookie sheet and bake 20 minutes. Serve with favorite tartar sauce. (Makes 4 servings.)
